Lyons Will - Riesling
Handpicked on the 19th March 2024. 60% of the fruit was destemmed and left on skins for 10-12 hours before being pressed. The other portion was whole bunch pressed. All fermentation took place in old oak. It spent 5 months in old oak on lees before it was moved to stainless steel for a further month. It was fined with vegan friendly bentonite, racked a few weeks later and put through a gentle pad filter before bottling. In true Lyons Will style this Riesling expresses a wide spectrum with citrus characters surrounded by floral nuances, the high natural acid is balanced by a touch of residual sugar (3.2 g/L).
